SA Dining Meeting Minutes

Hughes Dining Hall

Changes to Hughes

  • New menu and new interior
  • All day breakfast 8am to 2:30 pm
    • Waffles, eggs and potatoes
  • New BBQ menu
    • Dr. Pepper baked beans
    • Homemade veggie burger
    • Pulled pork etc,
  • Trying to do as many foods from scratch and fresh each day

Dairy Bar

Presentation by Jason Huck, general manager of Cornell Dairy

  • Changes:
    • Stocking Hall needs renovation
    • New research building
  • With new classrooms and a new dairy bar
    • Also, a new dairy plant on Judd Falls Rd.
  • With a glass wall to see into factory
  • Yogurts, pudding, juice and cider will still be Cornell produced at a smaller facility
  • New dairy will hopefully be in operation by 2013
  • Milk is now from Crowley
  • Ice cream is still Cornell Dairy for now
  • Future ice cream will be supplied by Perry’s Ice cream
    • Flavors will be decided by SA dining committee
  • Apple cider as soon as Friday!
  • Primary mission of Cornell Dairy is to support extension and research

Cage Free Eggs? Presentation by Prof. Joe Regenstein

  • Eggs spark a discussion of ethics in animal agriculture and welfare
  • Cage free eggs make up 5% of US egg production
  • Advantages of caged eggs:
    • Fewer soil borne diseases
    • Better overall health and welfare for the laying hens
    • Cleaner, safer eggs (if waste is properly disposed of)
    • Increased egg production
  • Advantages of cage free eggs:
  • Doubles floor space per chicken
    • Allows dust bathing
    • Allows nesting and perches
  • Disadvantages:
    • Laying hens are still inside
    • Increased mortality, cannibalism and ammonia
  • Very expensive to switch from caged to cage free eggs (almost double)
  • Brown Univ. had cage free but switched back because it was too $
  • Should Cornell switch?
  • Alumnus coming to Cornell to make a case for cage free eggs
